What is the difference between RD-R8000-SS and RD-R8000-GS?

SS is the short cage, handling cassettes up to 35T with 35T total capacity. GS is the long cage, handling up to 34T cassettes with 39T total capacity. Choose SS for flat-to-rolling terrain; choose GS for hilly routes with large cassettes.

My shifting is sluggish — is the derailleur faulty?

Sluggish shifting is almost always a cable issue, not a derailleur fault. Replace the inner cable and housing first. If that does not fix it, check derailleur hanger alignment with a hanger alignment gauge before blaming the derailleur.
